As the weather turns cooler and we all cozy up indoors, there’s nothing better than a warm drink and a sweet treat to go with it. If you’re looking for something fun and easy to bake that pairs perfectly with your morning coffee or an evening cup of tea, I’ve got just the thing for you—homemade biscotti made with cake mix!
Yes, you read that right! Biscotti doesn’t have to be complicated or take hours in the kitchen. With just a box of cake mix and a few other ingredients, you can whip up a batch of these crispy, crunchy, chocolate-dipped delights that are sure to impress your family and friends (or just treat yourself!).
Why Cake Mix Biscotti?
Sometimes, baking from scratch can feel daunting, especially if you’re short on time or just getting started with baking. That’s where cake mix comes in! Using cake mix as a base is a quick and reliable way to make sure your biscotti comes out with just the right texture and sweetness every time. It takes out the guesswork and leaves you with more time to enjoy the fun parts—like dipping the biscotti in chocolate!
Ingredients You’ll Need:
- 1 box of cake mix (any flavor you love—I recommend vanilla, chocolate, or even spice cake!)
- 1 cup all-purpose flour
- 3 large eggs
- 1/2 cup melted butter ( melted )
- 1 teaspoon vanilla extract
- Optional add-ins: chopped nuts, dried fruit, or chocolate chips
- 1 – 1 1/2 cups chocolate chips to mix in or any other mix ins
- optional 1/2 cup pecans or other nuts
- ( I’ve used shredded coconut as a mix in and it’s delish )
- meltable chocolate ( almond bark ) or chocolate chips
- OPTIONAL – add 1 teaspoon peppermint extract to a chocolate cake mix for the holidays
Let’s Get Baking!
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the cake mix, flour, eggs, melted butter, and vanilla extract. Mix until a dough forms. If it’s too sticky, add a little extra flour until it’s manageable.
- If you’d like to add some texture, this is the perfect time to mix in chopped nuts, dried cranberries, or chocolate chips.
- Shape the dough into a long, flat log about 4+ inches wide and 1 inch tall. Place it on your prepared baking sheet.
- Bake for 25-30 minutes, or until the edges are golden brown. Remove from the oven and let it cool for about 10 minutes.
- Slice the biscotti log into 1/2-inch thick slices using a sharp knife. Arrange the slices cut side down on the baking sheet and return them to the oven.
- Bake for another 6 -12 minutes on each side, until they are golden and crisp. Let them cool completely on a wire rack. ( I turn the oven down to 325 when I do this. ) Keep an eye on it to decide how long for each side, I averaged 7-9 minutes.
Time for the Chocolate Dip!
- In a microwave-safe bowl, melt the chocolate chips with the coconut oil in 20-second intervals, stirring between each, until smooth. ( coconut oil is optional 1T )
- Once the biscotti are fully cooled, dip one end (or the entire bottom) of each piece into the melted chocolate. Place the dipped biscotti on a sheet of parchment paper to set.
- For a festive touch, sprinkle some crushed nuts, sprinkles, or a drizzle of white chocolate on top before the chocolate hardens. I added white chocolate with crushed peppermint candies on the chocolate peppermint biscotti and just chocolate with a fine silver sprinkle topper on the yellow cake mix.
